In a non stick pan, roast 1 cup makhana using 1 tbsp extra virgin olive oil. Add some almonds to it and let them cool down. In the same pan add 1 tsp oil, cumin seeds, 2 green chillies, 1 chopped onion, 1 chopped tomato, 1 tsp turmeric powder and 1 tsp coriander powder. Cook till the mixture becomes translucent. Now, along with the nuts, mix them together to make a fine puree. Cook it for 5-7 minutes in the same pan, add salt, and this curry can be used to make any side dish using paneer, tofu, roasted sweet potatoes, which you can make with brown rice or bajra roti.
