  • Add a little ghee and oil – While kneading the dough, add a little ghee and oil to it to make the dough soft and moist. This will add a layer of crispiness to the egg rolls when later fried on tawa.
  • Powdered Sugar – A secret ingredient used in making egg rolls is powdered sugar. Yes, you read that right. Sugar can add a distinctive sweetness that is so important to Kolkata-style egg rolls, as Ananya Banerjee explains in her secret tip. So don’t hesitate to add it!
  • Let the dough set – After mixing all the ingredients, let the dough set for at least 20-25 minutes. This will allow all the components to be well incorporated and also homogenize the texture of the dough for egg rolls.
