Here’s how to make Ragda Puri. Ragda Puri

First prepare the ragda. Boil the chickpeas in a cooker, then drain the water from the chickpeas and put them in fresh water along with salt and ginger. Pressure cook for 15 minutes until it becomes soft. Add more water to a simple pan. Cook on low flame till it becomes soft enough to be mashed easily. Till then prepare the pooris.

For puris, in a bowl add flour, salt, ghee and water and knead into a dough. Keep the dough aside for some time. Finally, make round balls out of it and deep fry the pooris.

Now to assemble the ragda puri, take out the poori in a plate and add the mashed chickpeas. Lastly, sprinkle lemon juice and onions and garnish with chaat masala, chilli powder, onion, tamarind chutney and coriander leaves. Serve and enjoy!
