Andhra-Style Beans Kudumulu: A Delicious Steamed Rice Cake for a Healthy Breakfast

Often when we say the word ‘snack’, the first thing that comes to our mind is crunchy pakoras, fried tikkis, tantric chaat and masala street food, right? Now put the word ‘healthy’ in front of the word snack and we’re immediately taken to the world of quinoa, sprouts, and avocado. Although there is nothing wrong with these foods, it makes us think, why can’t we find a common ground? A snack that’s neither too oily nor too soft and steamed, a snack that’s delicious enough to keep us hooked but not necessarily oily? Many people can tell you that finding a snack like this isn’t easy, but not us! Because what we have here fits the bill for being both delicious and healthy, and the best part is, it’s easy and doesn’t require a few major ingredients. It is a steamed salted rice cake from Andhra Pradesh and is called Chikudu Kudumulu, which translates to Kudumulu beans.

Kudumulu are Andhra style steamed rice cakes similar to modaks. They can be made sweet or salty. The ones we are trying today are made with broad beans, rice flour and some simple tempering South Indian spices. Once they come in shape, fry them in oil for some time before boiling them in the same pan. These soft steamed cakes taste great with coconut chutney or garlic chutney. Put coarsely chopped beans in a pan and let it boil till soft. Make a paste by adding green chili, garlic and ginger to the mixer. Add this paste to the boiling beans along with chopped coriander and rice flour. Mix everything well and let it cool. After cooling, knead the dough and shape it as per your choice. Many people steam these in idli plates or you can cook them in a simple pan as well. Heat oil and add mustard seeds, rice cakes and rice cakes and fry in oil for 2-3 minutes and then add water, cover the lid and keep it to cook in steam.
