Summer is here and so it’s time to make everything cool and cozy. With the rise in temperature, we are experiencing a change in our diet. Hot and rich foods have been replaced by comfort food and coffee and tea have been taken over by coolers. It is no different for Bollywood actress Anushka Sharma as well. A foodie at heart, Anushka never shies away from trying a variety of cuisines and local foods. And we see her updating about all her foodie activities and explorations on Instagram. Recently, she took to her Insta-stories to post about one of her latest meals that defines summer for many Bengalis. wonder what? This is a panta bhaat plate. Have a look:

panta bhati (or Poitabhat) rice is soaked overnight and fermented in water. It is generally prepared using leftover rice from the last meal. It is consumed after cooling, adding some water (in which rice is soaked) on top. Panta Bhaat has a very earthy, homely flavor that is very local and comforting. Panta bhaat ko aloo chokha (boiled potatoes with spices), started bhaja (eggplant fritters), bori bhaja (fried vadi), sukno lonka bhaja (fried whole red chillies), onions with salt and some mustard oil is served. Some people also like to eat panta bhaat with aloo posto, mach bhaja (fried fish), and bhurji etc.

Anushka however wanted to keep it original and authentic and added some aloo chokha, bhaja, sukno lonka bhaja, with onions, green chillies and some mustard oil drizzled over the rice.

  • Soak the remaining rice in water overnight.

  • Now take rice and some water in a plate, crush red chili on top and add mustard oil to it.
  • Take aloo chokha, started bhaja, onion and green chili together and eat it.
