Olive oil – 2 tbsp
Finely chopped garlic – 2 tbsp
Finely chopped onion – cup
Tomato puree – 1/3 cup
Tomato ketchup – 2 tbsp
salt
paprika powder
cumin powder
oregano
chili flakes
coriander powder
cup boiled corn
Chopped capsicum – cup
Leftover rice – 2 cups
Finely chopped coriander – cup
How to Make a Quick Mexican Rice Bowl?
1) Heat a little olive oil in a pan and add finely chopped ginger and onion. Saute for a while and add the delicious tomato puree. Add some tomato ketchup also. Mix well.
2) Now, you have to add different spices one by one. Add a little salt, paprika powder, cumin powder, carom seeds, red chilli flakes and coriander powder. Mix all these very well.
3) It’s time to add some boiled corn and chopped capsicum. Mix all these well. Now, finally, add the remaining rice to the preparation and mix well. Your Mexican rice is ready. On top you can add some fresh coriander leaves.
4) You can use sour cream, salsa and some cheddar cheese for garnishing.
