Chef Kunal Kapoor’s easy-to-make watermelon pudding recipe will make you swoon

Most of us are completely desi at heart. We love to dig into the traditional foods that we have always enjoyed since childhood. One such sweet delight is pudding. It is usually prepared for celebrations or other joyous occasions. However, if you are craving halwa in the scorching heat, then treat your sweet taste buds to a unique and delicious watermelon halwa. This must be your favorite fruit this season. Watermelon is delicious, hydrating and packed with various health properties. Give it a nice, lusciously sweet twist, and make a delicious pudding out of it. The ingredients required for Chef Kunal Kapoor’s Watermelon Halwa are as follows:

Watermelon rind – 3 large wedges

Ghee – 2-3 tbsp

Semolina (semolina) – 1 tbsp

Besan (gram flour) – 1 tbsp

Sugar – cup

Cardamom powder – tsp

Nutmeg powder – a pinch

Milk – 1 cup

Almonds and pistachios – a handful

How to make Watermelon Pudding?

1) First remove the outer thick green layer of watermelon with the help of a peel. Then again, repeat the process and remove another layer just below the green layer. Chop the peel roughly and put it in the grinder. Make it all into a paste without using water.

2) Heat ghee in a pan. Add semolina, gram flour and cook on low flame till they turn brown. After this, add the puree of melon peel and cook till it becomes thick. This should take about 15-20 minutes. Add sugar and cook again for 10 minutes. For more flavor, add cardamom powder, nutmeg powder and milk.

3) Cook for another five minutes and remove from heat.

4) You can use almonds and pistachios for garnishing. serve hot.
