Cuisine and snacks served with style at Chennai’s newest dessert places

If you’re the kind who believes that desserts should be tossed to take the place of an appetizer, you’ll probably find the time spent waiting for it at the end of a meal annoying. Something similar happened on the way to sample Double Roti’s new Desert Studio Delish. I’m stuck in an endless whirlwind of traffic, and if it were dinner somewhere, I’d arrive in time for dessert—but Nikesh Lamba, executive director of Pricol Gourmet, which runs Delish, recommends my evenings for small meals. Now filled with the happy light of an English kitchen in a green-tiled, white-walled space, Delish is on one side of the restaurant, with menus spelled out on its walls.

“Delish is where the science and art of baking come together to create some of the best sweet and savory bakes. Our focus was to offer Anna Nagar a breakfast space, a cafe and a dessert studio,” says Lamba.

The seemingly ubiquitous Chicken Pop-Corn is a surprise. Very simple in most places with a taste of oil for hours, here, it’s made with attention to detail – the spice and crunch are just right, especially when dunked in an in-house sauce. The classic pepperoni pizza with its fresh buffalo mozzarella sparkles all around but I tear up – the sauce is a bit spicy. Which makes it the perfect time to bring in the new kids on the block – classic operas, snickered and filter copy tarts. I dive in, rethinking the size of the waistband of my pants.

The classic opera features layers of almond joconde sponge, coffee buttercream and chocolate ganache; Filled with snicker’d caramel and paired with a heavenly peanut custard; And the filter casserole has a luscious coffee caramel, a delicate namalaka and a taste of home.

Delish is helmed by Kasturi Subramaniam and Upamanyu, formerly a chef instructor at Lavon Academy of Baking Science and Pastry Arts, Bengaluru. They’ve given up an endless parade of panna-cottas and light cream sponges to make desserts taste just like that – an indulgence.

S!gn is a lovely place to stop when you have a sugar craving but are hard pressed for the time. It doesn’t yet have a seating area and works at the counter, but it’s the kind of cheery outlet for carrying a friend or difficult sibling.

Lokesh Velayaudham, director of The SGN, says, “We were ready to start pre-pandemic, but we had to put our plans on hold. We opened our first outlet in Anna Nagar and plan to expand to Besant Nagar, Valasarvakkam and Khadar Nawaz Khan Road.

Lokesh suggests a must-try like the Gulab Jamun Cheesecake and the Alcohol Cakes and Tarts such as the Cape Monk (rum-base). A little old monk walks out from a sticky tart wrapped in a luscious layer of chocolate and coffee. At room temperature, this is the rum you taste first, with a hint of coffee at the end. In between, the chocolate masks the aftertaste of the wine, giving it a Christmas-come-hury air.

Chocolate Jaffa has a tart base, which does not have a sweet chocolate dome. Jaffa cakes typically come with a heart of orange, but pair well with blueberries and a light mousse.

Caribbean mousse, on the other hand, is for those who like fruit flavors. Coconut shavings and banana chunks make it very sweet all at once. The choux bun with hazelnut filling is a meal in itself and a little too chewy—but if you coat the crust with heavy cream on the inside, then topped with chocolate sauce and pralines, you’re ready for dinner. .
