Ice cream is a universally loved dessert. For this Diwali, present your guests and family with the tempting flavour of homemade coconut ice cream.

The recipe calls for simple ingredients, including one coconut, 4 cups of coconut milk, one cup of sugar, 4 tablespoons of cornstarch, and one cup of fresh cream.

Start by cutting the coconut into pieces and then proceed to a large vessel. In this vessel, combine the chopped coconut, cornflour, and half a cup of chilled coconut milk. Thoroughly mix these ingredients.

In a separate vessel, heat the remaining coconut milk on a medium flame until it reaches a boiling point. Then, add sugar and stir until it dissolves completely in the milk. Allow the sweetened coconut milk to boil for an additional 4 to 5 minutes.

Combine the coconut milk mixture from the first step with the sweetened coconut milk, incorporating the cornstarch. Ensure a thorough mix and refrigerate the mixture until it cools.

Once it is cooled, introduce fresh cream to the mixture. Transfer the concoction into an aluminium vessel, covering it with either aluminium foil or a clean sheet. Place the vessel in the freezer.

Leave the mixture in the freezer for approximately 6 to 7 hours. Afterwards, retrieve it, transfer the contents to a blender, and blend until a smooth consistency is achieved.

Return the blended mixture to the aluminium vessel, incorporating finely chopped coconut pieces. Cover the vessel once again, using aluminium foil, and freeze. After 5 to 6 hours, your scrumptious coconut ice cream will be ready to be served, adding a delightful touch to your Diwali celebrations.
