Hung curd, also known as Greek yogurt, is a delicious and nutritious option that’s perfect for warmer temperatures. This versatile ingredient can be used in a variety of dishes and is packed with a host of benefits. It has twice the amount of protein and half the amount of fat than regular yogurt, which makes it an ideal food for the health conscious as well. Its creamy texture makes it an ideal ingredient for many dishes, including fruit salads. Here are some recipes that you can make this summer using hung curd.

fruit salad:

Component:

  • 1 cup hung curd
  • 1/2 cup chopped mixed fruit (such as apple, banana, grapes, pomegranate, kiwi, mango, etc.)
  • 2 tbsp honey
  • 1/4 tsp cinnamon powder
  • Handful chopped nuts of your choice

Instruction:

  1. Put the hung curd in a bowl and whisk it till it becomes smooth and creamy.
  2. Add honey and cinnamon powder to the curd and mix well.
  3. Add the chopped fruits to the bowl and mix gently with the curd.
  4. Sprinkle chopped nuts over the salad and serve chilled.

Hung Curd Cutlets:

Component:

  • 1 cup hung curd
  • 1/2 cup boiled and mashed potatoes
  • 1/2 cup finely chopped mixed vegetables like carrots, beans, peas, capsicum etc.
  • 1/4 cup finely chopped onion
  • 1/4 cup breadcrumbs
  • 2 tbsp cornflour
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • salt to taste
  • oil for frying

Instruction:

  1. Take a container and put hung curd in it. Whisk it till the curd becomes smooth and creamy.
  2. Add mashed potatoes, vegetables, onions, breadcrumbs, cornflour, red chili powder, coriander powder, cumin powder and salt to the bowl and mix well.
  3. Shape the mixture into small cutlets or patties of desired shape and size.
  4. Heat oil in a pan and fry the cutlets till they turn golden brown from both the sides.
  5. Remove the cutlets from the pan and place them on a paper towel to absorb excess oil.

Apple Pudding:

Component:

  • 1 cup hung curd
  • 2 medium apples, peeled and grated
  • 2 tbsp condensed milk
  • 1 tbsp fresh cream
  • 2 tbsp honey
  • 1/4 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • A handful of chopped nuts such as almonds, walnuts, or pistachios.

Instruction:

  1. Take a mixing bowl and add hung curd, fresh cream and condensed milk. Whisk it until it becomes smooth and creamy.
  2. Add grated apple, honey, cinnamon powder and nutmeg powder to the bowl and mix well.
  3. Pour the mixture into a serving bowl or individual dessert bowls.
  4. Garnish with chopped nuts on top of the pudding.
  5. Store the pudding in the fridge for at least 30 minutes before serving.
