1. Egg and Mashed Potato Frittata

This dish makes a delicious, protein-rich breakfast. To make the Egg and Mashed Potato Frittata, you will first need to fry the onions and ginger-garlic paste. After this, add oregano, salt, red chili flakes and capsicum to the pan. Start stir-frying and then add your leftover mashed potatoes. If you’re baking the dish, transfer the mixture to a flat bowl. Break eggs on top (3-4 if you have 4 potato mash left over). Sprinkle bread crumbs and sprinkle grated cheese on top of the eggs. Place the bowl in the oven and bake until the top layer is brown and the eggs are almost cooked. You can also make this dish on a griddle. This dish makes a wonderful tea time snack. To make potato gola kebabs, first grate beetroot, cabbage, carrot and capsicum. Chop coriander, green chillies and onions. In a large bowl, stir all of these ingredients into your leftover mashed potatoes. Use a potato masher to mix them together. Add the roasted mixture of gram flour and maida along with bread crumbs to the mashed potatoes and vegetables. Add red chilli powder, roasted cumin powder, turmeric powder and coriander powder and mix. Make small cylindrical shapes out of the mixture and skewer them in the center with a long toothpick or tandoori stick. If you’re looking for something easy to make with leftover mashed potatoes, this recipe is perfect. To make the filling, fry the green chilies in olive oil. Transfer mashed potatoes to pan. Add kaffir lime leaves, curry powder, boiled peas, red chilli powder, coriander powder and salt. (If your mashed potatoes were already seasoned, don’t add too much salt and spices at this stage). If you are looking for a non-vegetarian dish, these chops are a great option. Shape the mashed potatoes into balls and then flatten them to make thick circles. Before doing this, wet your hands so that the stickiness of the potatoes can be avoided. Place a portion of the cooked keema in the centre. Make sure that the mince is as dry as possible so that the mince is not too lumpy. Seal the edges together from the top to make balls, flatten them slightly and roll them in flour.
