Do you know that gram flour or gram flour which is one of the most common items found in almost every Indian household, can lead to serious health hazards if consumed adulterated?

Well, as per the Food Safety and Standards Authority of India (FSSAI), having such adulterated gram flour is definitely a matter of serious concern. Due to this there is a possibility of the person becoming ill.

The FSSAI released a note in 2019 titled “Ensuring the safety of pulses and gram flour” which revealed that gram flour can be made by adding khesari dal, or maize flour, or yellow peas, rice, or artificial colours.

Lathyrism (a condition described as paralysis of the lower body including numbness in the limbs and spine) was a harmful consequence of khesari dal, so it was banned in 1961. However, the ban was lifted in 2016 by the Indian Council of Medical Research (ICMR). ,

Detection of food adulteration:

When additional health attention has become necessary in a post-pandemic world, it is extremely important that we take the issue of adulteration seriously and conduct adulteration testing to stay safe and avoid health risks.

Hence, FSSAI came up with an easy way to test gram flour before consumption.

According to his note shared on Twitter on October 27, 2021, to find out whether gram flour contains khesari dal, do the following experiments:

  1. Put 1 gram gram flour in a test tube.
  2. To remove the plant pigment in the solution, add 3 ml of water to it.
  3. Pour HCl (2 ml concentration) into the solution.
  4. Stir the mixture well and let it stand.
  5. Unadulterated gram flour will not show any change in colour. But due to adulteration, the mixture will turn pink. Methanyl yellow reacts with HCl and turns pink.
