1. Add Rice Flour

Pakoras are generally made using besan batter. However, the next time you plan to make this, add a little rice flour to your batter. Rice flour helps in making the pakoras crispy as it does not absorb oil as much as gram flour.

The next thing to keep in mind while making the batter is to use cold water. As the batter cools, it will not be able to absorb much oil. PS: Make sure not to add too much water as it may spoil the shape of your pakora.

3. Do not over run the batter

If you are using all purpose flour to make the batter, do not over stir it. By doing this the batter gets stretched and gluten starts to form. By this the pakoras will absorb a lot of oil and you will have soaked pakoras.
