To prepare this dish, first put ghee in a big pan. Add eight cashews and some raisins and fry them till they turn golden brown. Now in the same pan add bay leaves, cinnamon, cardamom, cloves and black pepper and fry.

After this, add onions, chillies and fry the onions till golden brown. Now add 1 cup basmati rice (20 minutes soaked) and fry for 1 minute without breaking the rice grains. Add water, lemon juice and salt. Stir well and let the water come to a boil. After the rice is cooked, add a spoonful of podi masala to it. Finally take it out and garnish with green coriander.
