To make this recipe, first heat ghee in a pan and fry cashews and raisins. Roast the cashews till they turn golden brown and keep them aside. Now in the same pan add bay leaves, cinnamon, cardamom, cloves and black pepper and fry. Add onions, chillies and fry till onions turn golden brown. Now add 1 cup basmati rice (20 minutes soaked) and fry for 1 minute without breaking the rice grains. Add water, lemon juice and salt. Stir well and let the water come to a boil. Cover and boil for 20 minutes. After 20 minutes, gently fluff the rice without breaking the rice grains. Add roasted nuts and mix well. Finally, enjoy Ghee Rice!
