Croquettes are famous in many countries around the world, and their fillings vary from region to region. The word “croquet” is believed to come from the French word “croquer”, meaning “to crunch” or “to bite”. This breakfast in India is very popular in the state Goa As well as in the communities of Goa elsewhere. Chicken croquettes are often served at get-togethers and small gatherings as a convenient yet delicious appetizer. Goan croquettes go best with sauce (tomato/chilli/schezwan), mint/garlic mayo or cheesy dip. They don’t require an oven or any fancy techniques – even beginners can quickly learn how to cook them!

How to make Goan croquettes at home

Before you start making the croquettes themselves, you’ll need to prepare the spicy seasoning that gives them their distinctive flavor. To make the spice, all you need is cumin, black pepper, cinnamon, cloves, turmeric, Cardamom and dry red chilies. Next, start making the chicken mixture in a kadhai. Saute onions, green chillies, ginger garlic paste, tomatoes and chicken pieces till half cooked. Add water, cover the vessel and let the mixture cook on low flame for 10 minutes. Once it is cooked and then cooled, put the chicken and vegetables in a blender and grind to make a coarse mixture. Take it out in a bowl, and add bread, Coriander leaves and the ground spice you made earlier. Add eggs and mix ingredients well in large bowl. Shape the chicken mixture into a small cylinder. Dip them in beaten egg white and coat with breadcrumbs to bind them well. Deep fry the croquettes till they turn brown.
