We all love to eat Biryani thali! Puffed rice mixed with puffed rice and chicken is not only delicious to eat but also one of the most comforting dishes on our list. And not only this, the popularity of biryani is such that you can easily find it from street vendors to big restaurants and even make it at home. Although this dish is mainly cooked with a certain type of meat, usually chicken or mutton, today we bring you vegetarian soya biryani that you will love to eat!

Now, we know that not many people can opt for vegetarian biryani, but trust us, this soya biryani is about to change your mind! This biryani is cooked in a variety of spices, vegetables, crunchy potatoes and soya which enhance the taste of rice. How to make Soya Biryani | Soya Biryani Recipe

First of all take a heavy bottomed vessel and heat mustard oil and fry the potatoes with soya chunks till the skin becomes crispy, filter the soybeans and keep them aside with the potatoes. In the same vessel add ghee along with whole spices. Add chopped onion and ginger garlic paste and cook. After this add tomatoes, curry leaves and all the powdered spices and mix.

Cover and cook till the oil separates from the tomato-spice mixture. Drain the soaked rice and add to the roasted spices – mix well. Add fried potatoes with soybeans. Now add coconut milk and mix well. Let the biryani come to a boil. Once it starts boiling, cover it with a heavy lid and cook on low flame for 10-15 minutes.
