The unique white color of samosas comes from the white butter. The shell of the samosa is made entirely of makhan, instead of the maida covering that is usually deep-fried! In the video, white butter is kneaded like all purpose flour by a street vendor and rolled into small thin circles like small rotis. Then put sweet stuffing of khoya, gulkand and dry fruits in the samosa and close it. Unlike typical samosas, this samosa is not deep fried as the butter will melt when it comes in contact with the hot oil. This butter samosa is dipped in cold water to ensure that it retains its shape. This sweet samosa is served cold not hot.
