Sugar and Salty Spices Liven Up Summer Berries You Can’t Miss

You probably can’t miss this good old fresh recipe, give it a try because we know for a fact that it is going to be a favorite.

It’s time to stop thinking about the difference between sweet and salty condiments. Not many chefs around the world make such a distinction.

In Greece and Turkey, for example, tomato sauce comes spiced with cinnamon, and in Mexico, fruit salad is sprinkled with red pepper. In both cases, the seasoning is subtle but adds enough contrast to make each bite more interesting.

We took this into account when looking for an easy way to liven up a simple summer berry compote. In this recipe from our book “Cookish,” which limits recipes to just six ingredients without sacrificing flavor, we tried black pepper and chili powder, a blend that includes not only spicy red peppers but also cumin, garlic, and onion. May also contain powder. The combination of sweet strawberries and savory spices was a hit, the perfect topping for vanilla ice cream or yogurt.

One teaspoon is enough for a pound of sweet strawberries, half of which we cooked with a relatively small amount of sugar and lime zest. We lightly mashed the ripe berries and poured them on top of the fresh ones, softened by the heat of the compote.

Replacing garam masala, an Indian spice blend that includes hot spices such as cinnamon and cloves, but also black pepper, mustard and coriander with citrus zest and berries, was equally good, albeit with a different flavor profile.

Citrus and Spice Strawberry Compote

Servings: 4 to 6

  • 1 pound strawberries, peeled and quartered
  • 2 tablespoons white sugar, divided
  • 1 lemon or grated zest of 1 lime or medium orange
  • 1 tsp chili powder or garam masala
  • tsp coarsely ground black pepper
  • pinch kosher salt

method:

  • In a medium bowl, toss two-thirds of berries with 1 tablespoon sugar and zest; Cancel.
  • In a small saucepan, saute chili powder until fragrant; Add remaining berries, remaining 1 Tbsp sugar, pepper, salt, and cup water.
  • Boil for 5 minutes, then mash the berries to break them up. Cook, stirring, until jammy.
  • Immediately pour the berries into the bowl and mix.
  • Let stand for 10 minutes.
