This masala jaggery recipe by Chef Pankaj Bhadauria is what we need in winters

Jaggery is a superfood rich in vitamins and minerals. This natural sweetener provides instant energy to the body and helps in digestion. It can also cure throat problems and keeps the body warm. Perhaps this is the reason why many sweets made from jaggery are perfect in the winter season. Celebrity chef Pankaj Bhadauria shows us how to make one such dessert. In an Instagram video, we can see Pankaj saying “masala gud”. He demonstrated the entire process of making the dessert and captioned the post, “Let us get ready for winter”.

He further added, “Here is a recipe of jaggery fortified with the goodness of spices which helps to improve digestion and fight cold. So now, whenever someone asks you at the end of the meal”what’s in sweet“Offer them this healthy and delicious option: Masala Good!”

To make Pankaj’s “Masala Gud”, you will need:

1) 1/2 tsp ghee

2) 1 cup Fox Nuts (Makhana)

3) 2 cups grated jaggery

4) 1 tsp dry ginger powder

5) 1/2 tsp carom seeds

6) 1/4 tsp black salt

7) 1/2 cup roasted peanuts

8) 1/4 cup almonds

9) 1/2 tsp cumin

Here’s how you can make it:

1) First of all, put ghee in a pan and fry one cup of makhana in it. Keep it aside.

2) Now take grated jaggery in the same pan and add dry ginger powder, carom seeds, black salt and add ghee roasted makhana to it. Knead well. Add roasted peanuts, almonds and cumin seeds.

3) Spread butter in a plate around it. Pour the mixture into a tray or thali (plate) and let it set.

4) Now you can cut them into pieces and eat them.

Earlier, in a post, Pankaj shared some golden rules of deep frying. That said the oil should be hot to medium hot. Put anything in cold oil for frying. She said to always move the food from side to side to avoid burning it.
