Along with Makar Sankranti, the celebration of New Year 2023 is going to start soon. It is one of the most popular Hindu festivals, celebrated every year on 14 January. Makar Sankranti marks the end of the winter season, paving the way for the warm summer days. The festival is celebrated in the states of Uttar Pradesh, Gujarat, Rajasthan, Bihar, West Bengal and many more. The celebration of Makar Sankranti coincides with Lohri in Punjab, Bihu in Assam and Pongal in the southern region of India. Although every state has its own way of celebrating this day, but what is common for all is the food. A variety of dishes are prepared for the festive feast in homes across India.

in Bengal, Makar Sankranti Marking the last day of the month of Paush, it is known as Paush Sankranti or Paush Parva. Thus, the day is celebrated with quintessential Bengali sweets Payesh (Kheer). In fact, people prepare pitta from freshly harvested rice and offer it to Goddess Lakshmi for happiness and prosperity. You will find a wide range of pithe in Bengal – Doodh Puli, Gokul Pithe, Chushi Pithe etc. But the most popular one is Patishapta. Patishapta is a thin crepe or pancake made with maida, rice flour and semolina, with a delicious caramelised shredded coconut-jaggery filling. It is soft, sweet and melts instantly in the mouth. It would not be an exaggeration to say that Bengali households look forward to Poush Parbon to eat this delicious dish.

How to make Patishapta – the classic Bengali crepe – for Makar Sankranti:

What is needed to make a husband?

For Patishapta we need semolina, white flour, sugar, cardamom powder, ghee, grated coconut, milk, khoya kheer (mawa) and jaggery.

Method to make Patishpat:

First of all prepare the batter by mixing semolina, sugar, flour and milk in a bowl. Then add cardamom powder to this mixture and keep it aside.

After this prepare the stuffing. Heat ghee in a pan and add grated coconut to it. Add jaggery to it and mix well. Knead a very soft dough by adding mawa to it and let it cool down.

Finally, gather everything together and prepare the patishapta. To do this, spread the batter with a ladle on a hot tawa greased with ghee. Put the stuffing in the center and fold it, like we do for dosa.

And you have a delicious Patishapta ready to eat. Enjoy hot.
