Call it comfort food or guilty pleasure, there are few dishes that have the potential to make us happy despite being packed with calories. Even celebrities, who maintain strict fitness rules, are not safe from such temptations. Guess what that feel-good food is all about for Taapsee Pannu? This is the popular North Indian dish Chole Bhature! Fried puffed roti served with a tangy, spicy chickpea curry and pickle, raw onion and mint chutney – it is perfect to combat hunger pangs and satiate the taste buds. So, we’re not really surprised why it’s the actress’ favorite.

Before Holi Taapsee PannuK Nutritionist Munmun Ganeriwal shared the recipe for soft, fluffy bhature on Instagram. In the caption, he wrote, “Slow ferment the dough as shown and enjoy this gluten-free, Indian sourdough bread as Taapsee does this festive season”.

She went on to say that bhature has long been dismissed as a junk food and it is time for a change in the narrative. In the caption, Munmun further clarified that the slow fermentation of the flour turns the wheat gluten-free.

Component:

1) Fresh curd – cup

2) Whole wheat flour (wheat flour) – 2.5 cups

3) Sugar – tbsp

4) Salt – 1 tbsp

5) Ghee

Here’s how you can make fluffy bhatures:

1) First of all, mix some ingredients for the dough in a bowl. Take the stated quantity of fresh curd (make sure it is not sour) along with all purpose flour. Add wheat flour (wheat flour) and half a tablespoon of sugar. Mix all the ingredients well and you may or may not need water to knead the dough.

2) Cover the cup with a cloth or lid and keep it in a warm place overnight or for 7-8 hours so that it can ferment naturally.

3) Next morning add about one tablespoon of salt and the same amount of ghee to the fermented flour. You can add a little warm water (not hot water) if needed. Gather dough into a compact ball.

4) Now, you have to use a damp cloth to cover it. Again, set it aside in a warm place for about a few hours.

5) Knead the dough again. Finally, it’s time to shape into 15-20 balls or as per your requirements.

6) Roll the balls in bhature and deep fry in ghee and your delicious dish is ready.

7) Now, you can serve it hot with chickpeas, pickled ginger and onion or any other homemade pickle.
