You have to start by preparing the bitter gourd. First of all, de-seed the bitter gourd and boil it. Soak it in cold water and chop it finely. After this, add chopped bitter gourd, boiled potatoes, minced garlic, ginger, grated khoya and gram flour in a bowl. Mash all these together and knead soft dough. Add black pepper, salt and cumin to it and mix well. Wrap the dough around a skewer like a seekh kebab. Heat a pan and add ghee. Cook the wrapped seekh kebabs till crisp. Bitter gourd kebabs are ready!
