Chef Saransh Goila listened to our wish and served us just the recipe we were looking for. Sharing her recipe on Instagram, she wrote, “Which is your favorite Christmas salad? Mine should be the Strawberry, Candied Walnut and Feta Salad. Will you make it this Christmas? It’s so delicious.”

To prepare their Christmas Special Salad you will need these ingredients:

arugula

spinach leaves

Strawberries, 80 g, sliced

Onion, 1 large piece, chopped

Cherry tomatoes, 6-8 pieces, halved

avocado, 1 slice, sliced

Walnuts, 45g

Castor Sugar, 50 grams

Garlic, 10 g, chopped

olive oil, 50 ml

Balsamic Vinegar, 20 ml

honey, 10g

Peanut Butter, 15g

salt to taste

ground black pepper to taste

Feta Cheese, 30 g, crumbled

Once you have all the ingredients, you can start making the salad. Here’s the process to rustle it up:

  1. Melt castor sugar in a pan until golden. Add walnuts and put them in the syrup. Keep it aside to crystallize.
  1. After the sugar-coated walnuts form crystals, grind them coarsely.
  1. Put the ground walnuts in the blender. Add garlic, olive oil, honey and balsamic vinegar, peanut butter, salt and crushed black pepper. Mix all the ingredients together. This is the dressing for the salad.
  2. In salad bowl, add arugula and baby spinach.
  3. Top it off with strawberries, onions, cherry tomatoes, and avocado.
  4. Add feta cheese and walnuts to this salad.
  5. Drizzle a good amount of dressing over the salad.
  6. Add spark to your salad bowl with star-shaped croutons.
