phirni

  1. Soak the washed rice for 30 minutes and then grind it into pieces.
  2. Take a handi and heat the milk on low flame. Also add sugar as well.
  3. Add green cardamom powder and cooked rice to it. Then add saffron and mix well.
  4. Transfer the phirni to a serving bowl and garnish with chopped almonds and pistachios.
  5. Serve chilled by pouring gooseberry on top.

Dahi Bhalle made from buckwheat flour

  1. Take finely grated boiled potatoes in a bowl.
  2. Add chilli, grated ginger and buckwheat flour. Mix it well.
  3. Apply oil on the palm and make small balls from the mixture.
  4. Fry the balls till golden brown. Once all the vadas are fried, prepare curd.
  5. Add salt to the curd and beat it well.
  6. After the curd becomes soft, add salt, red chili powder and cumin powder. Then mix it well.
  7. Dip the vadas in it and sprinkle some red chili powder and cumin powder.
  8. Garnish it with green coriander before serving.

Paneer Kundan Buds

  1. Slice the paneer and marinate them with turmeric and chili powder.
  2. Then fry them lightly.
  3. Take a pan and heat oil in it.
  4. Add red chillies, coriander, cloves and cardamom to the pan and fry till it changes colour.
  5. Add chopped onions and when they become translucent, add chopped tomatoes and dried rose petals. Fry the mixture.
  6. Add curd and garam masala. To prevent curd from turning into curd, beat it on low flame.
  7. Add lightly fried paneer to it and season it with salt.
  8. Garnish it with coriander leaves while serving.
