How to make Healthy Mango Launji with Sugar Substitute | Mango Launji Recipe

You do not need to use sugar or jaggery to make mango launji. Popular YouTuber ‘Cook With Parul’ recently shared the recipe of Sugarless Mango Launji on her channel. This delicious mango chutney can be easily made with rock sugar or mishri, a sugar substitute. It is the purest form of sugar and no chemicals are added to it. In addition, this sugar candy also has some cooling properties which make it ideal for the summer months.

  1. First of all take raw mango and peel it. Cut it into small 1 inch pieces and keep aside.
  2. Now put water in a pan and boil it. To make the water pungent, add salt, turmeric powder and bay leaves to it. Now add chopped raw mango and let it cook for about a minute or till it becomes soft. Strain the raw mango water and keep it aside to make a refreshing summer drink.
  3. Put oil in a pan, Cumin seeds (cumin), fennel seeds (saunf), mustard seeds (rai), kalonji and fenugreek seeds. After crackling, add asafoetida in it. Cook for a minute then add whole red chillies.
  4. Add the boiled raw mango pieces and mix well so that the masala gets coated well. Sprinkle a little Kashmiri red chilli powder, coriander powder and garam masala and mix again.
  5. Pour some water again in the pan and add sugar candy to it. Sprinkle rock salt and close the lid and let it boil for a minute. When the chutney becomes thick, take it off the flame and let it cool down. store at room temperature.
