How to Make Kakori Kebab: A Delightful Delight from the Streets of Lucknow

According to folklore, Nawab Syed Mohammad Haider Kazmi, a local swami from Kakori district of Lucknow, threw a party for one of his British associates. The Nawab serves the best of Awadhi food including the famous Khoj Kebab to his foreign guests. However, when a British officer made a lewd remark about the rough and tangy texture of seekh kebabs, the entire court committed an offence. Then the enraged Nawab immediately ordered his cook to make a tender version of those kebabs the next day, hence the famous Kakori Kebab!

First, mix the minced mutton with all the spices, marinate for about four hours, and then grind to form a smooth, thick paste. Knead this mixture well and add roasted gram and egg to it. Cover and refrigerate for another hour. About 25 minutes before serving, shape the meat around skewers and place the kebabs on a drip tray on the grill or in the preheated oven. If you’re cooking them on a charcoal grill, you’ll need to keep turning them to brown and cook evenly. It should take 15-20 minutes to cook them. Brush with ghee and cook for 2 more minutes. Serve chaat masala garnished with onions and lemon and serve with green chutney.
