First of all, you have to make a paste to give green color to the pulao. In a blender, make a smooth paste of mint, coriander, ginger, garlic and green chillies.

Heat a pan, roast cumin, cloves, green cardamom, black pepper and cinnamon sticks. Add onions and fry till light brown. Add coriander powder, turmeric powder, Kashmiri chili powder and garam masala powder. Then add vegetables and rice. Pour in water and sprinkle some lemon juice. Add bay leaves, salt and green paste. Cover the pan and let the pulao cook till the rice becomes soft. Casserole is ready!
