First of all we have to prepare the dough for the samosas. For this, add flour and salt in a bowl. mix well. Add oil and start kneading the dough till it becomes crumbly. Knead a hard dough by adding water gradually. Cover it with a wet cloth and keep it aside for 30 minutes. After some time knead the dough again and divide it into small parts.

To prepare the stuffing, heat some oil in a pan. Add cumin and fennel seeds and let them crackle. Add green chillies, ginger, onions and fry for a few seconds. Add coriander seeds, dry mango powder, garam masala and salt. Cook for about 1-2 minutes. Finally, add mashed potatoes and mix everything well. Take it off the flame, add kasoori methi and whole coriander. Mix well and keep aside.

To make potli, take a small ball of dough and roll it into a thin disc. Now take some stuffing and place it in the middle of the rolled disc. Brush the edges of the disc with water. Bring the edges together to make a bundle. Press the bag gently and seal it. (make sure the stuffing stays in place).
