She chooses Chilean kiwis that are not fully ripe. Semi-ripe kiwis balance the sweetness with a unique tartness. Peel them and cut them in a bowl. Add chopped onions, cilantro and jalapeos to make it spicy. To add a tangy tartness, add lime juice. Complete the recipe by adding salt and chili flakes.
