Queen Elizabeth’s Platinum Jubilee to Display Lemon Trifle, Chicken and More

Queen Elizabeth II of England became the first British monarch to complete 70 years of service on 6 February this year. His historic reign is being celebrated as Platinum Jubilee on a special weekend from June 2 to 5, 2022. The celebratory anniversary weekend will include a range of public events, community activities and initiatives. And can a celebration ever be complete without food? The official pudding that will represent the Queen’s Platinum Jubilee celebrations has just been chosen – it’s a Lemon and Swiss Roll Amaretti Trifle. The Duchess of Cornwall announced this pudding and its creator, Gemma Melvin, the winners of a nationwide competition.

The contest was organized by Fortnum & Mason and broadcast on BBC One, aimed at finding the perfect festive pudding, cake or tart for the Queen and her 70-year-old Platinum Jubilee celebrations. Reportedly there were approximately 5,000 entries for the contest, ranging in age from eight to 108. The five finalists were then shortlisted for the title of ‘The Jubilee Pudding’, which eventually went to 31-year-old Gemma Melvin.

Claiming to be inspired by her grandmother, Gemma Melvin’s trifle pudding has apparently become a hot topic of discussion queen’s Celebration. “I really think we’re going to be making Gemma’s trifle for at least the next 50 to 100 years,” said Roger Pizzi, executive pastry chef for Fortnum & Mason. The Gemma Trifle is layered with lemon curd Swiss rolls, St. Clemente jelly, lemon custard, mandarin coulis, amaretti biscuits and freshly whipped cream. All these ingredients can be easily purchased from the local supermarket, thus adding to the simplicity of the recipe and making it suitable not only for the queen, but for the entire country.

Lemon trifle is a very popular dessert.

The lemon trifle won’t be the only dish served at the Queen’s Platinum Jubilee celebrations. Historical dishes such as Victorian SpongeBob and Coronation Chicken will also be a part of this momentous occasion. SpongeBob was, in fact, a favorite of Queen According to the BBC, Victoria was named in his honor in 1861 after Prince Albert’s death. It is made from buttercream and raspberry jam filling.

Meanwhile, Coronation Chicken was created in 1953 by Le Cordon Bleu Cookery School. Also called ‘Polette Rein Elisabeth’, it was originally built for the coronation ceremony of the Queen. The dish’s original chef, Angela Wood, spoke to AFP about the original recipe – poaching chicken with a bouillon garni with chopped onions, curry powder, tomato puree, red wine and a sauce made with reduction Lemon juice, Then the mixture is cooled and mixed in mayonnaise, lightly whipped cream and apricot puree. “It’s a weird mix. And people do the first bit (curry powder and wine) and taste it and it’s so awesome and strong. I mean you can’t believe it can be right,” Wood told AFP.
