1. Oil should be hot to medium hot. Put anything in cold oil for frying.

2. Do not throw food in the oil from above. Always slide food from side to side. It helps you prevent burns.

4. Let the food roast on high flame for a minute and then on medium flame let the food cool down properly from inside.

5. If you want to include your fried food in gravy, then remember this golden rule – either the fried food or the gravy should be cold. For example, if your kofta balls are hot, the gravy should be cold (or vice versa).
