This crispy Bihari-style bachata recipe is perfect for evening tea time

Bachka is a popular deep-fried snack made with black gram, gram flour and lots of spices. It is super crispy, flavourful and very similar to the humble pakoras of the north. This delicious snack will be ready in just under 30 minutes and tastes best when paired with tea. Without further ado, let’s find out how it is made.

firstly, we need to soak the kala chana for about 4-5 hours. Now pressure cook it with a pinch of salt. Once done, strain it completely with the help of a strainer. Let it cool for 15-20 minutes and keep aside.

To prepare gram flour batter, add gram flour and salt in a bowl. Add water gradually and whisk well to make a batter of medium coating consistency. To temper the batter, heat some mustard oil in a pan. Add cumin seeds, ginger-garlic paste, green chillies, turmeric, red chilli powder and garam masala. Fry it well and mix it in gram flour solution.

Mix everything together and check the spice. Now add the cooled black gram along with the chopped onions. mix well. Heat oil in a deep frying pan on medium heat. With the help of two spoons, start pouring the batter little by little into the oil. Fry the bachka till it turns crispy and golden brown from both the sides. Once done, take them out on tissue paper and sprinkle chaat masala on top. Bihari style babies are ready!
