Winter special: This traditional carrot-radish pickle recipe is too good not to try

100 carrots and radishes are used in the salad, but we can also make spicy pickle from these vegetables.

In winter months we usually eat raw mango pickle, lemon or gooseberry pickle.

No meal is complete without mouth-watering, sweet, sour and tangy pickles. Carrots and radishes are often used in salads, but we can make spicy pickles from these vegetables as well. Both carrot and radish have many health benefits as well. Eating pickle not only increases the taste of food but also helps in stomach related problems. In winter months we usually eat raw mango pickle, lemon or gooseberry pickle. But compared to these, carrot-radish pickle is no less in enhancing the taste of your food.

The easy recipe for making carrot-radish pickle is as follows:

material:

Carrot (cut lengthwise) – 2 cups, Radish (cut lengthwise) – 2 cups, Green chili – 2, Garlic – 3/4 clove, Ginger – 1/2 tsp, Kashmiri red chili – 1 tbsp, Turmeric – 1/2 tsp, Dry Mango – 1/2 tsp, Vinegar – 3 tsp, Kalonji – 1/2 tsp, Asafoetida – 1 pinch, Mustard oil – 1/4 cup and Salt – as per taste.

To prepare the pickle (ingredients):

Fenugreek seeds – 1/2 tsp, Cumin – 1 tsp, Ajwain – 1/4 tsp, Fennel – 1/2 tsp, Coriander – 1 tsp and Mustard seeds – 1 tsp.

Way:

Take a pan and dry roast (rai, cumin, whole coriander, dry ginger, carom seeds and fenugreek seeds) on low flame. Fry the spices till the aroma starts coming. Switch off the gas and let it cool down. After this, grind the spices coarsely in the mixer.

Now put mustard oil in a pan and heat it on low-medium flame. Add fennel seeds and a pinch of asafoetida. Then add garlic, black pepper and ginger and fry it. After this add chopped radish carrot and mix it well. Cook it for 1 minute till it becomes slightly soft. Now add pickle masala.

After adding pickle masala, add red chili powder, turmeric, dry mango powder and salt as per taste and let all the ingredients cook for a minute. Turn off the gas and add vinegar to the pickle and mix everything well. Vinegar adds sourness to the pickle and it will also act as a preservative. Yummy Carrot-Radish Pickle is ready to be served!
