Craving Mustard Greens? Take a look at the recipe shared by Summary Goila’s mom

Sarson Ka Saag, also known as ‘Sarso Da Saag’, is a traditional Punjabi dish that is popular in many parts of the country. In Hindi or Punjabi, ‘Sarso’ means ‘mustard’ and ‘Saag’ means ‘greens’. This bright green curry boasts the goodness of mustard leaves and spinach, making it a healthy delight. It is a staple of winter food and is often eaten with makki ki roti – flat bread made from maize flour. If you’re already looking for the recipe, don’t worry. Chef Saransh Goila, in an Instagram video, shared a recipe of Sarson Ka Saag prepared by his mother.

In the caption, he wrote, ‘Sarso Ka Saag Aunty Goila Style! @poonamgoila always cooks extra greens for me as she knows I will eat it for lunch, dinner and then the next day as it gets tastier as it matures! He added that the recipe calls for tomatoes and is “always a hit with friends and family.” He added that there was another version without tomatoes, “which is more rustic”.

Component:

1) Mustard leaves (mustard) – 750 grams

2) Spinach (Palak) – 500 grams

3) Bathua leaves – 250 grams

4) Radish leaves (radish leaves) – 100 grams

5) Salt

6) water 500 ml

7) Ghee 2 tbsp

8) Garlic cloves 8-10

9) Onion 3

10) Ginger 2 inches

11) Chopped Tomatoes 3

12) Chili powder 2 tbsp

13) Haldi (Turmeric) Tbsp

14) Coriander Powder

15) Maize flour (maize flour)

Process:

1) First cut and wash the leaves of mustard, spinach, bathua and radish. Now boil them – pressure cook on low flame for 45 minutes. Don’t forget to add some salt.

2) Now, when it cools down, separate the water from the greens (the leaves you have boiled). Blend the greens and keep the water aside.

3) Take ghee in a pan, add garlic buds, onion and ginger and add some tomatoes. Adding tomatoes is optional. Now add spices one by one including turmeric, chili powder, coriander powder and salt.

4) Add a mixture of green mixed leaves (greens) to it. You have to cook it for 15 minutes.

5) After boiling the greens (leaf), add some corn flour in the water in which you have separated the corn flour. Add this mixture to the greens prepared by you and cook it well for 10 minutes.

6) Your sarson ka saag is ready! Serve with makki ki roti, radish lachha, jaggery, topped with white butter.
